Is anybody getting tired from cooking with zucchini this season? Do you still have plenty growing in your garden like we do? Well, here's what we did with a bunch of zucchini and tomatoes.
This makes for an awesome sauce. Pour it over a bed of rice or pasta. We made a big batch in a huge saucepan that we preserved into jars and will use throughout the winter in various recipes.INGREDIENTS:
10 larger Zucchinis
Salt & Pepper to taste
NOTE: You can add more tomatoes or zucchini to get the texture you like.
