Pesto and Zucchini Flatbread

Pesto & Zucchini Flatbread

If there's one thing I don't like, it's a messy and overfull refrigerator.  For this reason, I don't purchase food on impulse.  ~ It's so easy to go to the grocery store and buy more than needed, but this is something I have under control.

The way I taught myself to keep my refrigerator neat and clean is by using up all food, including leftovers before my next trip to the grocers, which also means my refrigerator gets a good wipe down with disinfecting cloths before new food enters.   If I don't see myself cooking a certain item within the next couple of days, I simply don't purchase it.

On the other hand, I like making my own preserves and keep certain staples on hand, but this is also limited since I don't like cluttered refrigerator doors.

The other day, I was making pesto sauce using up a whole bunch of basil from my garden.  I basically spent the day making this sauce and freezing it into muffin tins that were later transferred to freezer containers.  By the time I was done, I wasn't in the mood to cook a fancy meal for dinner.  

I had some pita flatbreads and leftover grilled zucchini sitting in the refrigerator as well as the fresh basil pesto sauce I had just made.  Here's what I came up with, using these ingredients:
INGREDIENTS:
Grilled Zucchini (Summer Squash)
Pesto Sauce
Pita Bread
Slice of Cheese

Method:
1.  Spread pesto on pita.
2.  Add strips of grilled zucchini.
3.  Top with a slice of cheese.
4.  Bake at 350F for 15 minutes.

  3. Sounds luscious! Necessity is the mother of invention. When I teach making quiche, I give students one complete recipe and they make it. Then they rummage around my frig and pantry and figure out another quiche themselves. I never know what they'll make, but it's always good! Happy Monday!

  6. Yummy!!! Your leftover food remake looks like my 'try-my-best' newly made food. My leftovers might not make such a good dinner.. day old flatbread, quinoa salad, seaweed, rice crispy squares.....

  7. I love how simple that looks! I would love to be as organised with my fridge as you are, but sometimes I love having things in my fridge that I don't yet have a use for, it allows for a bit of creativity :) But I totally need a few 'clear out the cupboards' meals before I go shopping again! There are things that have been in my cupboard for months!

  9. I'm the same way - I like to totally use up everything in my pantry and frig before I go make another trip to the grocery store. I'm big on not wasting and making sure our leftovers get changed up a bit and eaten. Yours looks so yummy!

  26. I also dislike an overfull fridge…however I’m not so good at controlling my impulses at the grocery store! On top of that my garden is really starting to produce…it’s been such a challenge to use up all the veggies! This looks so delicious…I happen to have all the ingredients! My kind of lunch…thanks for the inspiration!
