| Zucchini & Lentil Soup |
Has anyone ever noticed how quick zucchinis grow?
I watered the garden one morning and noticed there were a couple of small zucchinis growing. The next day I had to leave home early and only got around to watering the garden in the dark that evening. Then came morning (basically 2 days later). I went out to water my garden and I couldn't believe my eyes. The zucchinis grew tremendously!
So what did I do with these 2 massive zucchinis? Well, I took one and made a huge pot of soup based on nothing but experience. At the end, I thought about adding vermicelli noodles, but as the package was sitting in my hands, I decided I didn't want to add a starchy carb. I needed a protein instead. Lentils! That's what I added and boy was this ever amazing!
I'll tell you what I did with the other zucchini on another day.
