It's been said that you can't freeze tomatoes, however, I do. We have so many tomato plants growing in our vegetable garden that they all seem to harvest at the same time.
Run a frozen tomato under water and watch how easily the skin peels off.
Wait a few minutes to allow the tomato to start thawing before cutting it into pieces. It will still be frozen, however, allowing it to soften just a little will make chopping easier.
While the tomato will never come back to a fresh state, these pieces of tomato can be added to any recipe that calls for cooked tomatoes.
Frozen tomatoes can also be used in a sauce. The tomatoes will puree.
