Zucchini Preserve |
Is anybody getting tired from cooking with zucchini this season? Do you still have plenty growing in your garden like we do? Well, here's what we did with a bunch of zucchini and tomatoes.
This makes for an awesome sauce. Pour it over a bed of rice or pasta. We made a big batch in a huge saucepan that we preserved into jars and will use throughout the winter in various recipes.
INGREDIENTS:
2 Onions
10 Tomatoes
10 larger Zucchinis
Salt & Pepper to taste
NOTE: You can add more tomatoes or zucchini to get the texture you like.

ReplyDeleteThis sounds great! We live in an apartment and don't have a garden, but I love to buy produce when it is in season and at it's cheapest. This is a great recipe for the summer!

ReplyDeleteI was so tired of zucchini last year that I decided not to plant any....so far happy with that decision,lol. I do love zucchini, but I was swimming in them and dreaming about them. Same with cherries this year:)

ReplyDeleteYes we still have tons. This reminds me of a thing we used to make called apple tomato relish. It was sweet with cinnamon and we ate it on eggs. I think I will be using this soon for some zucchini usage!

ReplyDeleteNot me! We've had such a lousy growing season that no body has brought any zucchini! I'm going to have to actually buy some to make my annual loaves of zucchini bread. Your sauce looks delish...I'll keep my fingers crossed for some last minute donations so I can try it :)
