Zucchini Fritters |
In an ideal world, making zucchini fritters would be as easy as tossing zucchini slices into a large baggy full of flour (seasoned to taste with salt, pepper, paprika, etc) until well coated and then dipping into a bowl of whisked eggs and milk before frying, but for anyone that follows my blog loyally, you would know that's not the case for me. My daughter has an egg allergy, which means I'm always having to look for alternative ways of cooking.
Inspired by Vefa Alexiadou's Zucchini Yeast Fritters recipe from her Sunny Mediterranean Cuisine cookbook, I created these sliced zucchini fritters which turned out really good, but like Vefa suggests, they should be served immediately.

ReplyDeleteFritters can be tricky. If not served right after frying they get really soggy and can lose their appeal. Yours look delicious. have a great day. Blessings...Mary

ReplyDeleteYummy! My mom used to make something similar, but she was also adding a tomato on top of zucchini :)
ReplyDeletePity she is allergic to eggs. I would add some grated graviera or halloumi as well as some spices in the batter.
