| Carrot & Celery Salad |
What do you do when your husband hates raw carrots and one of your daughters hates cooked carrots? I steam them to soften them up a bit. This way, they still have a bit of a crunch, but they're no longer raw. Add my famous little dressing and two of my family members are satisfied.
Personally, I don't really like carrots on their own. Sometimes I add steamed celery to compliment the carrots in a salad as shown above and other times I mix them with steamed cauliflower and steamed broccoli. Now this makes for an awesome salad during barbecue season that refrigerates well for a week. Wish I'd taken a picture of them all four combined together.
