Salmon & Leek Pasta



Salmon & Leek Pasta
While on route to Florida, I bought a piece of Pacific Coast Canadian Smoked Salmon from Duty Free and had to make use of it while away.  Although the recipe below calls for lox, this salmon substitute made for a very tasty meal.



Ingredients:
1 large Onion
3 Leeks (not the green part)
Package of Baby Spinach
3 cloves of Garlic
Smoked Salmon or Lox
1 Lemon
1.5 Cups White Wine
1 Cup Cream
Pasta

1.  Slice onions & leeks and finely chop garlic.

2.  Chop smoked salmon into small pieces or use salmon lox (preference).

3.  Prepare lemon, wine, salmon, garlic and spinach.

4.  Saute onions and leek.  Once onions are translucent, add the garlic.  In the meantime, start boiling water and cook pasta as you continue with this recipe.

5.  Squeeze a whole lemon onto the onions and leeks.

6.  Add 1 to 1.5 cups of white wine.  Stir and then add  the salmon and a package of baby spinach.  Season with salt & pepper.

7. Stir in the cooked pasta.

8.  Add a cup of cream.  (I didn't have any table cream).

9.  Pour into a bowl and ready to serve.
