Baked Eggs with Asparagus and Herbs |
A couple of mornings ago, I woke up completely restless. I wasn't quite sure what to have for breakfast and was not in the mood for my usual go-to morning meal which is oatmeal and blueberries. In fact, I wasn't all that hungry since I haven't been feeling well, I decided to pour myself a cup of coffee and look over my reading list. That's when I came across an amazing recipe posted by One Perfect Bite.
This recipe was just what I've been craving. I read over the details and realized I didn't have all the ingredients on hand so I just substituted for what I did have. This isn't about personal taste, it was truly about making do with what I had. Thank goodness for the herbs in my garden and the asparagus we just purchased on the weekend.
While I'm very pleased with the taste of my breakfast, I still plan to make Mary's recipe without any substitutes.

Here's my version ....
INGREDIENTS:
Bunch of Asparagus (cut into 1 inch pieces)
1 small cooking Onion (diced)
2 Green Onions (finely sliced)
8 Eggs
6 Tbsp of Herb Mixture (Basil, Cilantro, Parsley - finely chopped)
1/2 Cup Milk
Handful of Grated Swiss Emmenthal Cheese
Salt & Pepper to taste
Mix and add grated Emmenthal Cheese |

ReplyDeleteThis looks fantastic. The only problem with cooking with asparagus is that I love it so much on its own! I think I'd make an exception for this dish, though - it's so simple and I love all the flavors.
