Banana Bread Cupcakes with Mastika Cream Cheese Frosting |
Ever since I saw a post on Kopiaste's blog for Banana Bread Cupcakes with Mastic Cream Cheese Frosting, I've been dreaming about making this recipe. I really admire Ivy and her creativity in the kitchen. She is Cypriot, lives in Greece and speaks English too. A very talented lady, indeed!
This banana bread cupcake recipe and icing was created by Ivy.
While I realize that not everyone knows what Mastic is, they can check on Kopiaste's post and read links to the detail of its origin. The only thing I will tell you is that it's found in only one place throughout the world, which is on a specific tree located on one of the Greek islands.
Mastic can be found at a local Greek or Macedonian specialty shop/grocer, or bakery. If you cannot find it, just omit it from the recipe and I can guarantee you that you will still be satisfied.

- Set aside to cool on a wire rack while preparing icing.
- Decorate cupcakes with icing and a slice of banana on top.
Wow these look awesome! I love bananas... and am always looking for ways to use them up! I've never heard of Mastika before, I'll have to see if I can find it.
ReplyDeleteMastika has a distinctive taste. Like Ivy says, if you add it into the recipe, try with just 3 or 4 drops the first time you make them. I used all 10 in the batter and another 10 in the frosting, but I'm used to the taste from our Easter baked goods and love it. It makes the house smell so good while baking. They taste similar to the scent they give when you crush the tears. If you don't like the smell, then don't add them to the recipe.
DeleteThese sound wonderful with or without the mastic. I'm so glad you found the recipe to share with us. I'm going to look for an online source for the mastic as I know I won't be able to find it locally. I hope you have a great day. Blessings...Mary
