Meat Stuffed Artichokes

Meat Stuffed Artichoke
I'm really becoming quite fond of artichokes.  The other day, while shopping at Loblaws, they had these massive artichokes in their organic section and of course, I bought four of them.

What does one do with these massive artichokes?  Well, I turned to my blogger reading list and found a recipe posted at Memorie de Angelina, which taught me how to handle the artichoke and then inspired me to create my own recipe.

I also found this You Tube video which was quite helpful and gave me another idea for a future recipe.  There's so many good resources out there!

I must say that we were all very pleased with the outcome.  


NOTE: I used this recipe for the beef mixture and just filled the middles of the artichoke and between the leaves wherever I could get them to separate.

  3. Ok, that's definitely something I've never seen before..Back home we just stuff artichoke to make salads...This is a brilliant idea! I love it! My mother will love it, I have to share your recipe with her.

  8. Lovely and rustic. I LOVE artichokes but I've never cooked with them before and wouldn't know where to start or how to even prepare one. So I was stoked when I found this traversing through your blog.
