Meat Stuffed Artichoke |
I'm really becoming quite fond of artichokes. The other day, while shopping at Loblaws, they had these massive artichokes in their organic section and of course, I bought four of them.
What does one do with these massive artichokes? Well, I turned to my blogger reading list and found a recipe posted at Memorie de Angelina, which taught me how to handle the artichoke and then inspired me to create my own recipe.
I also found this You Tube video which was quite helpful and gave me another idea for a future recipe. There's so many good resources out there!
I must say that we were all very pleased with the outcome.
NOTE: I used this recipe for the beef mixture and just filled the middles of the artichoke and between the leaves wherever I could get them to separate.

Lovely and rustic. I LOVE artichokes but I've never cooked with them before and wouldn't know where to start or how to even prepare one. So I was stoked when I found this traversing through your blog.
