Why is my Chimichurri Sauce not as green as shown in Laurie's Cravings? Well, that's because I thought I'd be a smarty and use the dried Greek oregano in my pantry. BIG mistake! Laurie's recipe calls for fresh oregano and that's exactly what you should use.
Although the photo is not so pretty, the marinade was still very delicious! We really enjoyed a little taste of Argentina right here in our Canadian home.
I will definitely be making this sauce again. Only next time I'll be sure to follow Laurie's recipe right down to the fresh oregano.

Everything looks delicious Ellen! I think it's good to know that using dried oregano works great if you don't have fresh on hand. I think I'm going to try it next time I make a batch. I think it will keep longer in the fridge since it is dried, rather than fresh.
