Shrimp in a Pesto Bake

Shrimp in a Pesto Bake

This recipe was Inspired by Le Creuset's recipe for Poivrons aux Crevettes Sauce Pesto.  I have made and remade their recipe until I perfected it to my taste.

The individual portion size makes for an awesome appetizer, especially when entertaining.  Another option is to serve for dinner with a hearty salad.

INGREDIENTS:
1 large Onion
1 cup small Shrimps
2 heaping tsp Pesto Sauce
3 Tbsp Creme Fraiche
Salt & Pepper to taste
2 Tbsp Pecorino Sauce
Dried Sliced Baguette or Croutons
Optional:  1 finely chopped Green Pepper

Optional:  Add in a finely chopped green pepper before adding shrimps.

Check for readiness at 20 minutes.
