Banana Muffins

Banana Muffins

Why is it that muffins seam to be the go-to comfort food?  Is it the smaller size of the cake muffin that allows us to indulge in the pleasure of sugars without the guilt?  Or is it because they're simply quick and easy to make?

INSTRUCTION:

1.  Preheat oven to 350°F

2.  Sift together:
          1 ¾ cup sifted flour
          2 ¼ tsp. baking powder
          ½ tsp. salt

3.  Blend until creamy:
          1/3 cup shortening
          2/3 cup sugar
          ¾ tsp. lemon juice

4.  Beat in:
          2 beaten eggs
          3 ripe bananas

5.  Gradually, in 3 separate times, add sifted ingredients into the sugar mixture.
6.  Beat the batter after each addition until smooth.
7.  Pour batter into lined muffin tins.
8.  Bake for about 20 to 25 minutes.  (Test with toothpick for doneness)

  13. I think for me it's the second reason....your muffins look yummy and I so want to turn on my oven, but I would have whole house of grumpy kids and one very grumpy mom :)

  14. oh, i think muffins are much more quicker to make like quick breads and also dont really require any decoration unlike cupcakes. I'm sure these banana muffins tasted great!

  17. You can't beat muffins, they are very comforting...more so than a cupcake!! Yours look delicious!! Banana bakes seemto have been very popular in the last couple of weeks so I may have to make something banana-ery!! :-)
