Pasta with Yellow Pear Tomatoes

Pasta with Yellow Pear Tomatoes
When we purchased 4 cherry tomato plants last May, we never expected to pick these little yellow pear shaped tomatoes from those plants.  To our surprise, these tomatoes are so juicy and full of flavour.  Their branches are full of fruit and just when we think we've picked all the ripened tomatoes, we wake up to an even bigger batch the next morning.

While these tomatoes are so tasty on their own or in a salad, we're having a lot of fun discovering different ways of cooking with them and enjoying the rich flavour these tomatoes are adding to each dish.

Salmon Pasta

Salmon Pasta

I made a similar dish while in Florida using a small amount of smoked salmon.  The original recipe calls for lox, which is what I used here.  This version is so much tastier!  I'm glad I was able to repost and share.

The marriage of these flavours is incredible!  This recipe is so full of nutrition, however, I advise using a low fat cream.

Peppers & Feta Tomato Sauce

Peppers & Feta Tomato Sauce

One of the main agricultures in Florina, Greece is peppers.  Growing up, this is one vegetable I remember being on our table quite frequently, whether it was added into a meal, a salad, or just a side dish.

Below is a recipe representing my Macedonian heritage.

When making this dish, be sure to use the creamiest Feta Cheese you can find.  The illustrations in the recipe below were made with Goat's Cheese and did not cream enough.  Trust me.  The type of Feta Cheese you use in this recipe will make all the difference in taste and texture.  My personal favourite Feta Cheese is made by Dodoni.
