This dish was created out of sheer luck.  The fridge was getting bare and I wanted to give it a good cleaning.  I was not going grocery shopping until all food was used up ~ An empty fridge is so much easier to clean.

Now that I'm spending more and more time outdoors gardening, I've been trying to make quick recipes that don't require too much time spent indoors.

This dish was created in order to use up the lonely mushrooms in my refrigerator.  Odd freezer and pantry items were added to make this dish a little more interesting with no clue as to what the end result would taste like, which was surprisingly good. 

Overall, we were quite pleased with the outcome.  Only next time, I'll be sure to use fresh spinach.  (I think it would give this dish a livelier colour).

Baked Pita Bread with Spinach, Mushrooms & Goat's Cheese

I spent the day working in the garden, turning soil, trimming plants and attaching supports to the tomato plants.  Oh, how I cannot wait until it's time to start enjoying the fruits from all this labour!  This gardening thing is starting to wear me down.  

The day went by so quickly and before I knew it, it was almost time for dinner and I hadn't taken anything out of the freezer or gone to the grocery store.  Now what can I make that's quick and easy?

I  browsed through the fridge and pantry and pulled out an onion, mushrooms, spinach, goat's cheese and Greek pita.  This took less than 5 minutes to prepare followed by another 10 to 15 minutes in the oven.  You could always skip out on the baking, however, I won't.  I like pita while it's warm and crunchy.  It just gives comfort to the meal!

Spinach Croissants

Aunt Toula makes the absolute most amazing croissants that I have ever tasted.  There isn't one person out there that has tried them and didn't LOVE them as much as our entire family does.  We always get so excited when she comes to visit because there's always a special bowl full of this delicacy.

It took me a long time to get this recipe from my aunt.  I've attempted making them on my own, but something is always a little off.  While in Florida, Aunt Toula allowed me to watch and photograph her in action, step by step.

The entire building smelled so nice from the outside.  All our neighbours enjoyed a sample, including the UPS delivery man that my aunt befriended over the winter.

While on route to Florida, I bought a piece of Pacific Coast Canadian Smoked Salmon from Duty Free and had to make use of it while away.  Although the recipe below calls for lox, this salmon substitute made for a very tasty meal.

I don't think there's a vegetable that doesn't go well with rice.  One of my favourites is spinach.   This combination goes very well on the side with lamb.

Personally, I enjoy a veal stew with rice and spinach.  Why don't you give it a try?
