Green Bean Salad


Green Bean Salad

Every year, we plant a vegetable garden and in that garden we plant green beans.  Every spring, we say we won’t plant as many seeds, but no matter how much we scale back, there’s always an abundance of green beans harvesting in our garden.

That being said, we always have to come up with different ways for cooking these beans. 

We make stew, salads, and add them to hearty soups, etc..  We even boil and store them frozen for use throughout the winter months.

Below is one of my green bean salad recipes with an oil and vinegar dressing.



Ingredients:
Small Red Onion
Green Beans
Fresh Tomatoes
2 tbsp Extra Virgin Olive Oil
2 tbsp Vinegar
Salt & Pepper

1.  Slice a small red onion.

2.  Wash and chop up green beans.

3.  Boil the green beans until soft (approximately 20 minutes).

4.  Chop up fresh tomatoes.

5.  Prepare oil and vinegar dressing and season with salt and pepper.

6.  Toss all ingredients together in a big bowl.
