Zucchini Fritter Dip

Zucchini Fritter Dip
From 100 Best Classic Tapas recipes, here is the most amazing dip recipe I've ever tried.  If you love garlic, this is a dip for you!  Like pesto sauce, this dip is based on pine nuts, except there's no basil in this dip.  Parsley is used here.  

This is so quick and easy to make and stores well in the refrigerator.  Make in advance and serve with zucchini fritters as shown here and here.


INGREDIENTS:
2/3 cup Pine Nuts
1 Garlic clove
3 Tbsp Olive Oil
1 Tbsp Lemon juice
3 Tbsp Water
1 Tbsp chopped Parsley
Salt & Pepper

  4. I love zucchini & the dip sounds delicious....I wonder what I could put instead of pine nuts cause that is one of the few things I dislike. Maybe I can try it with walnuts :)

  10. I was going through my handmade cookbook the other day (when I make a recipe, I write it down and put it in a folder alphabetically) I noticed that I have no recipes for the letter "z". And here you are, the last 3 recipes have all started with Z. Oh zucchinis. I need to buy some to fill up that void..
